Almost over!! + Weekend Recap
Let me start this off with a fun fact about me: There are not words for how much I love Justin Timberlake. I’m watching his Netflix concert documentary right now and I mean I’m just dying. I love my husband more than anything but I’m just saying that if things don’t work out for JT and Jess and I go missing, he’ll know where to find me. Also, if you EVER have a chance to see him in person – DO IT. I don’t care if you have to open a credit card or take a loan out, it’s worth every bit of it. This documentary does not do it even an ounce of justice. Ok that was excessive and I am done.
Y’all tomorrow is DAY 30!!!! I am right on track for the feels of “omg I’m so glad it’s over but wait what am I going to eat now” situation. I do plan to reintroduce though – which I will lay out for you at the end of this post along with a recipe, so stick with me.
But first – a weekend recap. I went to the beach with some of my lady friends and it was amazing. We ate GOOD and they were all super supportive of my Whole30ing even while on a weekend getaway. The weekend was truly refreshing and rejuvenating. We talked about so much awesome stuff – movies, food, family, our past, our dream goals, God, you name it. How often do you get 5 girls together for a weekend and not once does it turn into a gossip fest!? Like never, let’s be real. But it didn’t, and I can certainly tell that it is a large part of why I feel so refreshed and not exhausted after a weekend of travel. So THANK YOU to my #grelfie ladies and I can’t wait to do it again!
Here’s what we did as a guide for those of you who might find yourself on Highway 30-A for a weekend get away yourself.
Friday night: We got in right around 8:00pm and went straight to dinner in Seaside at The Great Southern Cafe. I had west indies salad and a blackened salmon salad with grilled vegetables. It was entirely too much food and I ate all of it. We went to the condo (One Seagrove Place) and just chatted until after midnight.
Saturday: We all (but one 😉 ) got up pretty early and drank some coffee together. We ran to Publix to stock up on some snacks for the weekend. We came back to the condo and cooked eggs and bacon before a quick walk on the beach. It was chilly but nice. Then, we went to Andy’s Nail & Spa for mani pedis! It was such a fun treat and it was a great nail place. It opened about a year ago and I would highly suggest it. After nails, we went back to Seaside and had a late lunch a Bud & Alley’s. On the way back we stopped at Goatfeathers to get some grouper for dinner. We hung out and chit chatted some more and just relaxed. For dinner we made roasted sweet potatoes, brussels sprouts with a little bacon, and oven roasted grouper. It was SO good! We turned on a movie and then decided to turn it off because were enjoying talking with each other more than watching!
Sunday: We woke up and cooked breakfast again, then went for a very short walk on the beach (it was cold and so windy) before hoping in the car to head home.
Can you believe I went the whole weekend making good food choices, and when I got back for my brother-in-law’s birthday dinner, I just about threw in the Whole30 towel. WHAT!? My mom makes the most delicious manicotti you will ever have, and that’s what he chose for his menu. I was in SUCH TURMOIL – “this is definitely a ‘worth it’ food, but that’s not a thing during the official Whole30” “28 rounds up to 30” “my blog friends will understand I needed to savor the moment with my family” – AND MORE! But then I sullenly dished up my spaghetti squash and homemade marinara and ate it while drooling over everyone else plate. Luckily, tomorrow is the last day of this and my mom packed me up some to eat later! She’s just the best!
So here is my reintro plan (honestly not entirely sure where the manicotti fits in yet so I’ll let you know what I decide). I’m having to get a little creative because I’m going to Denver next week for work and reintro might be a little tough on the road. Again, I’ll let you know what I end up doing but here are my initial thoughts:
Wednesday – Legumes
An apple with peanut butter at breakfast, hummus and carrots with lunch, and black beans on a taco salad for dinner.
Thursday-Saturday: back to Whole30
Sunday – Non-gluten grains
Oatmeal for breakfast, rice for lunch (probably from Chipotle), and tacos with corn tortilla for dinner
Monday-Wednesday: back to Whole30
Ok so Monday I leave for Denver so I’m either going to a) go back to as Whole30 a diet as possible while on the road or b) same as a but just for Mon-Wed and reintroduce dairy on Thursday. Now, dairy can typically be one of the “harshest” to reintroduce, so it might be better for me to wait until I am home and do that on Saturday. Stay tuned.
Lastly, I will introduce gluten containing grains (either Monday the 13 or Wednesday the 15)
Toast for breakfast, taco with flour tortilla for lunch, pasta for dinner
Aaaaaand as promised here is a recipe for sticking through that random long post! This is Warm Vegetable Curry, a recipe you will love and only make when your husband is out of town because he would be mad if you gave him a meal with no meat.
1 can full fat coconut milk
1.5ish cups chicken broth
1/2 an onion, roughly chopped
1/2 inch knob of ginger, finely chopped
1 Tbsp minced garlic
1 Tbsp red curry paste
1/2 Tbsp garam masala
1/2 Tbsp curry powder
1 tsp turmeric
Dash of salt and pepper to taste
Chopped veggies of choice (I used asparagus, mushrooms, cauliflower)
Directions (should make about 2 servings)
Heat oil of choice (I used olive oil) in a medium pot over medium high heat. Sauté onions, garlic, ginger and curry paste until fragrant. Turn heat down to medium and pour in coconut milk and chicken broth. Add veggies. Add spices and simmer, covered until veggies are soft. Ladle into a beautiful bowl and savor every bite while you watch Justin Timberlake dance on his Netflix movie….
