Easy Chicken Salad
Forgive any errors in this post because I’m writing it through tears as I catch up on This Is Us…..Y’ALL MY WORD IT IS TOO MUCH!
Let me tell you what I’ve learned in my BRIEF time as a self proclaimed food blogger. You can slave alllll dang day in the kitchen to produce the most delicious sounding and looking and tasting recipe you could ever dream of, but all people are gonna ask you for are the recipes for the random concoctions you make when you are borderline running out of food. But ya know what? That’s what I love about you people. You like the easy stuff, and you seem to be trusting me to give it to you.
And so we have……an actual recipe for a thrown together chicken salad. Because you asked. SO keep asking for stuff – I’m a sucker so I’ll do it.
The truth is, for some reason lunches are the hardest meal of the day for me. I’m not a big sandwich eater so that basically throws out all normal lunch food. Breakfast is easy because I could eat eggs and bacon every day for the rest of my life. Dinner is fun because I have time to get creative and try new things basically every night. And then, there’s lunch. Boring ol’ lunch that has to be fast and easy because I have this thing called a job that requires me to be there for the majority of the day. I know, such a bummer.
Lunch is usually leftover dinner (if my husband didn’t eat it all). I’ll do leftovers about twice a week, and then have something easy that I can prep like this Chicken Salad for the other days. Now you can have it too!

1 12.5 oz can of chicken (or on chicken breast, cooked and shredded)
1 celery stalk, diced
5ish pickles, diced
3 tbsp mayo (I used homemade)
1/2-1 Tbsp red onion, diced
1 sprig of dill, chopped
Salt & Pepper to taste
Drain chicken. Stir all that shit together! Eat it on up! 🙂
