Honeycrisp Apple Cider

Please save yourself the time of sniffing candles like a maniac this Fall to find one that has the perrrrrrfect fall smell. Because I have a better option. This homemade apple cider. Your house will smell like heaven. And honestly, with our world the way it is, we can all use as much heaven as we can find right now.

A few years ago myself and 3 of my best friends bought Britney Spears tickets, packed up our sparkly clothes and highest heels, and headed to Vegas. We missed each other and wanted a fun girls trip, so of course it was the perfect spot. It was such a fun trip. We ate, drank, walked miles up and down the strip, met people from all over the world, went to pool parties, did all the Vegas things. Never in a million years did it cross my mind that any of us were in danger of a massacre of any kind.

Ok..maybe I was the only one in sparkly clothes..

I don’t want to harp, but I do want to recognize the fact that there are 59+ families who are no longer complete. People who thought their loved ones were going to Vegas for a few days to have fun with some friends, and now will never come home. It is tragic and awful and it breaks my heart and quite honestly pisses me right off (sorry mama). What is going on in the world that this ever becomes an option? What happened to Stephen Paddock along the road that made him decide this was the best solution? I’m so sad for everyone involved. Can we just love each other for the love!? I know there is a long way to go in fixing the world, but I think loving each other and being kind and spreading that wherever we go is a dadgum good start. That’s all. It’s just been on my mind and I don’t want to act like everyone’s life is totally normal and ok right now.

I love apple cider drinks when the weather gets chilly, but they are often super sweet and full of all kinds of gross things. This drink is comforting, easy, quite clean, and so so soooo tasty. It’s going to be a staple in our house throughout the rest of the year. The recipe is for the non-boozy version, but might I suggest adding a couple ounces of rum or bourbon? This recipe is the perfect amount for two – so snuggle up with your person and hold them close.


2 small honeycrisp apples, sliced fairly thin
1-2 slices lemon
2 cinnamon sticks
4 cloves
2 tsp coconut sugar


Put all ingredients except sugar into a pot. Cover completely with water, probably about 3 cups. Place over high heat until it gets to a rolling boil, then simmer for about 15 minutes. Taste, then add sugar to your desire – it won’t need more than a couple teaspoons, if any. Let simmer 5-10 more minutes. Strain and *serve in your coziest mug.
