Pumpkin Yogurt Granola Parfaits

Hi there! This is going to be a quick one because I am about to head out trick or treating with what I like to refer to as my nuggets – more commonly known to people as nieces and nephew!

You have probably been seeing lots of Halloween fun on the internet. Plenty of mummy hot dogs, and ghost brownies. This one is going to be a little less Halloweenie, but no less delicious! You’ll want to be sure and make a batch of my homemade Maple Pumpkin Granola before you get started on this one.

This is a really great grab and go breakfast to have in the fridge, and it is equally beautiful enough to serve at a fancy brunch party!


1 batch of Maple Pumpkin Granola (or other granola of your choice) 1 large container plain yogurt of your choice (I used Stoneyfield Organics Whole Milk)
1 Cup pumpkin puree
1/2 Cup maple syrup
1 Tbsp cinnamon
1/2 Tbsp ginger
1 tsp nutmeg
1 large red apple, chopped
1 large green apple, chopped


Combine ingredients yogurt through nutmeg and stir until mixed well. Taste and add more seasonings/syrup to your desired taste. Layer in small jars – yogurt, granola, apple. You could get really crazy and do MULTIPLE layers in a larger jar.
